Smoking meats in Patagonia

Post by Spudzilla » Wed Mar 21, 2018 1:04 pm

I built myself an ugly drum smoker and it has been getting lots of use down here. I have been able to find supplies of alder, apple and cherry wood, but I am curious if anyone has tried native woods (coyhue, lenga or any others) for smoking meats. What meats are you smoking, and what woods are you using?

You could find out which woods they use to produce merken. Some of it tastes like burnt newspaper, other batches are much more pleasant.
